Wai Mun’s main research interest lies with functional foods, the validation of their health benefitting properties, their development and incorporation into diet. He has published more than 30 scientific articles in International peer-review journals. In 2013, Wai Mun set up the Centre for Functional Food & Human Nutrition at Nanyang Polytechnic, and has since worked with more than ten local food companies to validate and develop novel functional food products.
Other than R&D, Wai Mun lectured Food Chemistry and Human Nutrition at the Nanyang Polytechnic, Singapore. Wai Mun has worked as a convenor with Singapore Standard Development Office in setting up the guidelines for Singapore food industry to design and develop functional food products. In 2017, he set up and manages Innovprof – a privately-owned company, to continue his R&D in functional food. He is also currently holding adjunct lecturing positions at the Newcastle University, United Kingdom and Nanyang Polytechnic, Singapore.
