Wai Mun obtained his PhD with Distinction in Chemistry and Pharmacology from the University of Western Australia in 2009. He then continued his postdoctoral training at the National University of Singapore before joining Nanyang Polytechnic, Singapore, as a lecturer. Wai Mun’s primary research interest is in functional foods, focusing on validating their health benefits, development, and integration into diets. He has published over 30 scientific articles in international peer-reviewed journals. In 2013, he established the Centre for Functional Food & Human Nutrition at Nanyang Polytechnic, working with over ten local food companies to develop and validate novel functional food products. In addition to his R&D work, Wai Mun lectured in Food Chemistry and Human Nutrition at Nanyang Polytechnic. He was also involved in setting guidelines for functional food design in Singapore’s food industry. In 2017, he founded Innovprof, a privately owned company to continue his functional food research.
